A good cast-iron pan. Most chefs will tell you that you NEED a cast-iron skillet. You can cook basically anything in it, it shouldn’t stick, and you can also pan fry items then finish them off in the oven. Make sure to look up the care for these pans, as they are different than nonstick or stainless steel.
