Oven thermometer. One of the digital ones with probes and wires. They usually come pre-set with the “done-ness” of different meats and the internal temperature that should be reached for that level of “done.” Like beef medium rare? Set the oven thermometer to beep at 63c/145f, stick a probe in the middle of the meat, and start cooking (either pan or oven). 

I use it most for beef fillet going into beef wellington. Almost any oven at almost any temperature…it’s still cooked at the point the middle of the meat is 63/145. Takes ALL guesswork and/or “not knowing the oven” out of it. Reddit User: Llamaalarmallama
